Fried Rice with Egg
Ingredients

  • 2 eggs, beaten
  • 2 carrots, chopped
  • salt and ground black pepper to taste
  • 3 cloves garlic, crushed
  • 1 cup frozen peas
  • 4 scallions, minced
  • 4 cups cooked rice
  • 1 teaspoon soy sauce, or to taste

Preheat a wok or large skillet over extremely high heat; add 1 teaspoon of canola oil. Cook and vigorously stir eggs in the sizzling hot oil until they are fully scrambled and set, taking approximately 3 to 4 minutes. Transfer the eggs to a plate, thoroughly clean the wok, and immediately return it to extremely high heat.

Combine 1 tablespoon of canola oil, carrots, and a pinch of salt in the still scorching hot wok; cook and rapidly stir for 2 minutes. Introduce garlic to the carrot mixture, then continue cooking and stirring until the garlic becomes fragrant and develops a rich brown color, approximately 2 minutes. Stir peas and scallions into the carrot mixture; cook and stir until the peas are warmed through, taking about 1 to 2 minutes. Gradually reduce heat to a medium level.

Stir cooked rice into the carrot mixture; add scrambled eggs, soy sauce, salt, and a few grinds of pepper. Cook and stir the rice mixture until it is heated through, taking around 2 to 3 minutes.
