  • 1/4 cup dried bread crumbs
  • 4 skinless, boneless chicken breasts
  • 3 tablespoons butter
  • 1/2 cup chicken broth
  • 1 cup heavy whipping cream
  • 1 (4 ounce) jar sliced pimento peppers, drained
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/8 teaspoon ground black pepper

Prepare the ingredients by placing milk and bread crumbs in two distinct, shallow containers. In a skillet, heat butter or margarine to a medium temperature. Dip the chicken in milk first, followed by coating it evenly with bread crumbs. Cook the chicken in butter or margarine on both sides until its juices flow freely (approximately 10 minutes). Set aside and keep warm.

Next, add the broth to the skillet. Bring it to a boil over medium heat and stir constantly to release any browned residue from the pan. Introduce cream and pimentos into the mixture, then boil and stir for about 1 minute. Decrease the heat.

Add Parmesan cheese, basil, and pepper to the sauce. Stir it well until heated through. Pour this sauce over the cooked chicken, and serve!
