  • 1/2 small onion, chopped
  • 1 tablespoon dried oregano
  • 1 clove garlic, finely chopped
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1 pinch ground black pepper
  • 1 1/4 cups shredded mozzarella cheese
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup shredded mozzarella cheese

Begin by gently pouring yeast over warm water in a small bowl, making sure the water has reached a comfortable temperature of around 100 degrees F (40 degrees C). Allow it to sit for 5 minutes, allowing the yeast to soften and form a creamy foam.

In another bowl, sift together flour, sugar, 1 tablespoon of dried oregano, and 1 teaspoon of salt. Combine the egg and oil in a separate bowl before adding it to the dry ingredients, stirring until well combined. Next, gently fold in the yeast mixture.

Once the dough has started to come together, transfer it onto a lightly floured surface and knead for approximately 8 minutes, until the dough is smooth and elastic.

Next, lightly oil a large bowl and gently place the dough inside. Cover it with a light cloth and let it rise in a warm, draft-free area (around 80 to 95 degrees F or 27 to 35 degrees C) for about an hour, until it has doubled in size.

In a saucepan, cook and stir diced tomatoes, tomato paste, onion, 1 tablespoon of dried oregano, garlic, onion powder, 1 teaspoon of salt, and pepper over medium heat until the sauce has thickened, taking around 15 to 20 minutes.

Once the dough is ready, punch it down and transfer it onto a lightly floured surface. Divide the dough into two equal pieces using a knife, being careful not to tear it.

Shape each piece of dough into rounds and let them rest for 10 minutes. Then, form the dough into rectangles and place them onto the prepared baking sheet.

Spoon a generous amount of tomato sauce over each piece of dough, followed by 1 1/4 cups of mozzarella cheese. Top with sliced bell pepper, onion, and mushroom.
