Ingredients
- 8 large tomatoes, cored
- 1 small sweet onion, chopped
- 1 clove garlic, chopped
- 2 tablespoons dried oregano
- 4 leaves chopped fresh basil
- 1/2 teaspoon salt
- freshly ground black pepper to taste

Make a small incision at the bottom of each tomato by cutting an 'X' shape. Fill a large container with ice-cold water to chill.

Bring a massive pot of water to its boiling point. Add tomatoes to the boiling water until their skin starts to curl and wrinkle, taking around 30 seconds. Remove tomatoes from the boiling water and plunge them into the bowl of ice-cold water to cool down, allowing you to handle them comfortably, for approximately 1-2 minutes.

Take tomatoes out of the ice water and peel off their skins, discarding them. Transfer the peeled tomatoes to a blender and blend until they become smooth and liquid-like. Pour this mixture into a medium-sized saucepan; add some chopped onion, minced garlic, dried oregano, fresh basil leaves, salt, and pepper. Let the sauce simmer over medium heat until it reaches your desired consistency, taking around 60-90 minutes.

Use an immersion blender to puree the pizza sauce until it's smooth and silky. You can use this sauce immediately, or store it in the refrigerator overnight to allow its flavors to meld together.
