Ingredients
- 1 1/2 cups packed fresh mint leaves and stems
- 2 1/4 cups boiling water
- 2 tablespoons lemon juice
- 1 drop green food color
- 3 1/2 cups white sugar
- 3 fluid ounces liquid pectin

First, thoroughly clean mint leaves and stems by rinsing them under cold running water. Next, place the cleaned mint into a medium-sized saucepan. Use a potato masher or the bottom of a glass/jar to crush the mint leaves, releasing their flavors and oils.

Add boiling water to the saucepan, cover it with a lid, and let it sit for 10 minutes. This allows the mint to infuse its flavors into the water.

Strain the mixture, measuring out 1 2/3 cups of mint leaves and return them to the saucepan. Add a squeeze of fresh lemon juice and a few drops of food coloring to enhance the flavor and color.

Mix in granulated sugar, stirring until it's fully incorporated into the mixture. Place the saucepan over high heat and bring the mixture to a boil, stirring constantly.

Add a packet of pectin to the saucepan and continue boiling the mixture for 1 minute, stirring constantly. This helps preserve the jam.

Remove the saucepan from the heat source and use a large metal spoon to skim off any foam that has formed on top.

Transfer the hot mixture to clean, sterile jars and seal them tightly.

Place a rack in the bottom of a large stockpot to prevent the jars from coming into contact with the pot's surface. Fill the stockpot halfway with water and bring it to a boil over high heat.

Carefully lower the jars into the pot using a jar holder, leaving at least 2 inches of space between each jar.

If necessary, pour in more boiling water to ensure the water level is at least 1 inch above the tops of the jars.

Bring the water to a full boil, cover the pot with a lid, and process the jars for 10 minutes.
