Ingredients
- 2/3 cup white sugar
- 2 eggs
- 1/3 cup milk
- 1/4 cup extra virgin olive oil
- 4 tablespoons unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1 pinch salt
- 2 tablespoons grated lemon zest
- 2 tablespoons grated orange zest
- 10 ounces small purple grapes

Preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius). Next, take some butter and flour, and generously cover the inside of a 9-inch round cake pan. Gently tap out any excess flour to ensure an even layer.

Using the powerful motor of a stand mixer, combine sugar and eggs in the bowl. Continue mixing until the mixture thickens and takes on a light, lemon hue, approximately 3 minutes. Add milk, olive oil, melted butter, and vanilla extract; blend until the ingredients are well combined.

In a separate bowl, mix together flour, baking powder, and salt. Add some grated lemon zest and orange zest to the bowl; gently toss until the ingredients are evenly coated with flour.

Carefully combine the dry ingredients with the wet ingredients in a large bowl. Use a wooden spoon to mix until everything is thoroughly blended together. Make sure to scrape down the sides of the bowl before mixing once more. Allow the mixture to sit for 10 minutes, allowing it to absorb the liquids.

Add approximately 7 to 8 ounces of grapes to the mixture; gently stir until they are fully incorporated. Spoon the batter into the prepared cake pan and smooth out the top with a spatula. Set aside any remaining grapes for later use.

Place the cake in the preheated oven and bake for 15 minutes. Remove it from the oven and sprinkle those reserved grapes over the top.

Return the cake to the oven and continue baking until the top is a deep, golden brown color and the cake feels firm when pressed with your fingertip, approximately 40 more minutes.

Once the cake is done, remove it from the oven and let it cool on a wire rack for 10 minutes. Run a knife along the sides of the pan to loosen it, then carefully release and remove the side of the springform pan. Place the cake on its base and let it cool to room temperature.

Finally, cut thin wedges of cake to serve.
