  • 2 tablespoons vegetable oil
  • 2 (14.5 ounce) cans Italian-style diced tomatoes
  • 1 (14 ounce) can beef broth
  • 4 carrots, chopped
  • 2 potatoes, peeled and chopped
  • 3/4 teaspoon dried thyme
  • 2 tablespoons Dijon-style prepared mustard
  • salt and pepper to taste

Combine the ground beef with flour in a spacious, airtight container and mix thoroughly to ensure an even coating.

Heat oil in a 6-quart saucepan over high heat and sear the beef until browned. Add a pinch of salt and pepper to taste, if desired.

Add diced tomatoes, beef broth, carrots, potatoes, and thyme. Bring the mixture to a rolling boil; then decrease the heat to a low simmer, cover the saucepan, and let it cook for 1 hour or until the beef becomes tender. Mix in a dollop of mustard and serve.
