  • 3 cups water
  • 1 pound dried split peas, rinsed
  • 2 pounds new potatoes, cut into bite-size chunks
  • 3/4 pound carrots, cut into bite-size chunks
  • 1 1/2 cups chopped lean cooked ham

Heat a generous amount of olive oil in a substantial, heavy cooking vessel designed for soups or stews. Introduce the onion and garlic into the pot, allowing them to soften and become translucent, approximately 5 minutes. Combine herbes de Provence, turmeric, bay leaves, and cayenne pepper into the mixture, stirring constantly until the flavors meld together, roughly 2 to 3 minutes.

Add a substantial amount of vegetable stock, water, split peas, half of the potatoes, and half of the carrots to the pot. Bring the mixture to a rolling boil before gradually decreasing the heat to a low simmer. Cover the pot and allow it to cook until the peas are nearly tender, approximately 35 minutes.

Stir in the remaining potatoes and carrots. Introduce the ham into the pot, cover it again, and continue to simmer until the vegetables are tender. If necessary, add more vegetable stock or water to achieve the desired consistency, approximately 25 additional minutes.
