Ingredients
- 10 slices bacon, cut into 1 inch pieces
- 5 onions, thinly sliced
- 1 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/2 cup milk
- 1/2 cup heavy cream
- 1 tablespoon all-purpose flour
- 4 eggs
- 1 pinch ground nutmeg
- 1 (9 inch) unbaked pie crust
Instructions
1
Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).
2
Next, cook the bacon in a skillet over medium heat until it reaches a nice brown color. Set the cooked bacon aside, reserving 4 tablespoons of its rendered fat in the skillet.
3
Then, add the onions to the same skillet with the reserved bacon fat and cook over high heat until they are evenly browned, taking about 8 minutes. Add a pinch of salt and pepper to taste.
4
Meanwhile, combine the milk and cream in a separate bowl. Sprinkle some flour over the onions and mix well to combine. Gradually stir in the milk mixture, then continue cooking over medium heat until the mixture thickens up nicely.
5
Remove the skillet from the heat, stir in the cooked bacon, and let it cool for 10 minutes to allow the flavors to meld together.
6
In a separate mixing bowl, beat the eggs until they become light and fluffy. Take a small amount of the onion mixture and stir it into the eggs, then repeat this process until all the onions have been fully incorporated.
7
Pour the egg mixture into your prepared pie shell and sprinkle with some nutmeg for added flavor.
8
Finally, bake the pie in your preheated oven until the crust is lightly browned and golden, taking about 20 minutes. Remove it from the oven and let it cool for just a few minutes before serving.
