  • 1/4 cup salted butter, melted
  • 1/3 cup milk
  • 1/4 teaspoon salt
  • 1 pinch ground black pepper
  • 2 tablespoons chopped fresh chives, or to taste

Preheat your oven to the optimal temperature of 375 degrees Fahrenheit, or equivalently 190 degrees Celsius.

Next, thoroughly clean and scrub the potatoes to remove any dirt or debris. Position the potatoes in the center of your oven rack and subject them to heat until they become tender when pierced with a fork, approximately 1 hour.

Remove the potatoes from the oven and allow them to cool down until they reach a comfortable temperature, roughly 15 minutes.

Now, cut the potatoes in half lengthwise and carefully extract the soft flesh from its skin, leaving the skin intact. Place the extracted potato flesh in a large bowl and utilize an electric mixer to blend it into a smooth, fluffy consistency.

Add a generous amount of butter, milk, salt, and pepper to the bowl with the potato flesh, and continue mixing until the ingredients are fully incorporated and the mixture is smooth.

Spoon the potato mixture into a pastry bag fitted with a large, round tip and pipe it back into the potato skins. Finish by sprinkling the potatoes with fresh chives.

Place the filled potato skins on a baking sheet and subject them to freezing temperatures until they become firm; then, transfer the frozen potatoes to freezer bags for long-term storage.
