  • 1 pint ricotta cheese
  • 9 ounces crumbled feta cheese
  • 2/3 cup pesto
  • 2 eggs, beaten
  • salt and pepper to taste
  • 1 (15 ounce) can tomato sauce
  • fresh pasta sheets
  • 1 1/3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

First, preheat the oven to a temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Next, place the pumpkin on a baking sheet and subject it to heat in the oven until it has turned a brown color and is tender, taking approximately 30 minutes.

Simultaneously, grill the eggplant on a charcoal grill or cook it in a skillet, flipping once, until it has developed a charred appearance and is tender, lasting around 10 to 15 minutes.

Cut the tomatoes in half and position them on a baking sheet, placing them inside the oven for the final 15 minutes of the pumpkin's cooking time; cook until they are tender and wrinkled.
