Fluffy Scrambled Omelet
Ingredients
  • 3 large eggs
  • 1 pinch salt
  • 1 pinch cayenne pepper
  • 1 teaspoon chopped fresh parsley
  • 1/2 teaspoon chopped fresh marjoram
  • 1/2 teaspoon chopped fresh thyme
  • 3 tablespoons grated sharp white Cheddar cheese
  • 2 teaspoons olive oil

Combine eggs, salt, cayenne, parsley, marjoram, thyme, and cheese in a small bowl and whisk the ingredients together until they are fully incorporated.

Heat oil in a small, non-stick pan over medium heat. Pour the egg mixture into the hot pan and use a rubber spatula to start breaking up the eggs, moving constantly and scraping the sides of the pan as necessary. When the eggs start to coalesce, reduce the heat to low and continue cooking, stirring slowly but constantly, until you achieve a soft, moist texture. Turn off the heat.

Using your spatula, gently push the eggs together at the bottom of the pan and work your way around the edges, tucking in and smoothing out the edges as you form the eggs into a compact shape. The curvature of the pan will aid in this process.

Increase the heat to medium to help create a crispy surface on the omelet, approximately 15 seconds. Remove from heat and carefully flip the omelet over onto a warm plate to serve immediately.
