  • 2 tablespoons ricotta cheese
  • 1/2 cup skim milk
  • 2 eggs, separated
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon canola oil, or as needed

Preheat your cooking surface to the desired temperature, either by heating a griddle to 325 degrees F (165 degrees C) or using a nonstick skillet over medium-low heat.

Mix together the ricotta cheese, milk, and egg yolks in a bowl until they are fully incorporated.

In a separate bowl, combine the flour, baking powder, and salt. Stir in the ricotta mixture until it is well blended.

Using a separate bowl, whip the egg whites until they become light and airy. Gently fold them into the ricotta mixture.

Lightly coat your preheated griddle with about 1 teaspoon of canola oil. Pour approximately 1/4 cup of batter onto the hot griddle for each pancake. Cook until both sides are evenly golden brown, typically taking 1 to 2 minutes per side; flip and cook for an additional 1 to 2 minutes. Continue with the remaining batter, re-oiling the griddle between batches.
