- 3/4 teaspoon vanilla extract
- 1 teaspoon vegetable oil, or as needed

Combine dry ingredients - flour, sugar, baking powder, cinnamon, and salt - in a substantial mixing container. Blend these dry ingredients with milk, an egg that has been beaten, 3 tablespoons of vegetable oil, and vanilla extract until only a small number of clumps remain. Allow the mixture to rest for 5 full minutes in order to achieve extra airiness.

Preheat a griddle over medium heat and anoint it with 1 teaspoon of vegetable oil. When the oil starts to sparkle, carefully pour approximately 1/4 cup of the mixture onto the hot griddle and cook until bubbles appear on its surface and the edges are dry, approximately 2 minutes. Flip the mixture over and cook until it is browned on the other side, approximately 2 minutes more. Continue with the rest of the mixture.
