Fluffy Chinese Steamed Buns
Ingredients
  • 1 3/4 cups all-purpose flour, divided
  • 3/4 cup warm water, divided
  • 1 tablespoon active dry yeast
  • 1 teaspoon white sugar
  • 2 tablespoons white sugar
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
Instructions
1
Gather and collect all the necessary ingredients beforehand
2
Combine 1/4 cup of flour, 1/4 cup of warm water, yeast, and 1 teaspoon of sugar in a large mixing container. Allow the mixture to rest for 30 minutes, allowing it to come together and form a cohesive unit
3
Combine the remaining 1 1/2 cups of flour, remaining 1/2 cup of warm water, 2 tablespoons of sugar, vegetable oil, and salt in a separate bowl. Mix everything together until the dough is smooth and elastic
4
Transfer the dough to a greased container, coat it evenly with oil, and let it sit for 2.5 to 3 hours, or until it has tripled in size
5
Punch down the dough and spread it out on a floured surface. Sprinkle baking powder evenly over the surface of the dough; then knead it for 5 minutes
6
Divide the dough into two equal parts, setting aside one half in a covered container. Divide the remaining half into 12 identical pieces
7
Shape each piece into a ball; transfer each ball to a small square of waxed paper with the smooth surface facing upwards. Repeat this process with the remaining dough half, covering all 24 dough balls and letting them rest for about 30 minutes
8
Boil some water in a wok, then reduce the heat to medium and maintain a low boil. Place a small wire rack in the middle of the wok, leaving at least 2 inches of space between the rack and the wok. Working in batches, place buns on waxed paper squares onto the steam rack, leaving 1 to 2 inches of space between each bun
9
Cover and steam the buns for 15 minutes. Carefully remove the lid, taking care not to let condensation drip onto the buns. Continue steaming the remaining buns until all are cooked
