  • 1 tablespoon chocolate chips (such as Enjoy LifeĀ®), or more to taste
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1 pinch ground cinnamon, or to taste
  • 1 egg
  • 1 egg white
  • 1 tablespoon honey
  • 2 teaspoons vanilla extract
  • 1/4 cup water, or as needed

Heat a well-greased skillet over medium-high heat until it reaches 375 degrees F (190 degrees C).

Combine almond flour, chocolate chips, baking soda, salt, and cinnamon in a bowl. Mix egg, egg white, honey, and vanilla extract separately in another container. Combine the two mixtures, adding just the right amount of water until you achieve a pancake-like batter consistency.

Spoon large amounts of the mixture onto the preheated skillet and cook until the pancakes are golden brown on both sides, 3 to 4 minutes per side. Flip and cook until the other side is also golden brown, 2 to 3 minutes per side. Continue with the remaining batter.
