  • 1/3 cup cocoa powder
  • 2 1/4 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons xanthan gum
  • 1 1/2 cups mayonnaise
  • 1 1/2 cups hot water
  • 1 1/2 teaspoons vanilla extract

Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.

Next, take a can of cooking spray and give it a good shake before spraying it evenly onto the surfaces of two 9-inch round cake pans.

To make the cake batter, combine three cups of all-purpose flour, one cup of granulated sugar, two tablespoons of unsweetened cocoa powder, and a teaspoon each of baking powder, baking soda, and xanthan gum in a large mixing bowl.

Using an electric mixer or whisk, blend the dry ingredients together until well combined. Then, slowly pour in 1/2 cup of mayonnaise while continuously mixing until the mixture is smooth and free of lumps.

Gradually add 1 cup of hot water, along with a teaspoon of pure vanilla extract, to the bowl and mix until well incorporated.

Spoon the cake batter evenly into the prepared pans, making sure to fill them about 2/3 full.
