  • 1 tablespoon dried oregano
  • 2 tablespoons olive oil
  • 3/4 cup butter
  • 3 cups sliced portobello mushrooms
  • 3/4 cup sun-dried tomatoes
  • 1/2 cup packed fresh spinach
  • 1 cup Marsala wine

Prepare the chicken breasts by positioning them between two sheets of parchment paper, and then use a meat tenderizer to flatten them to an even thickness of 6 mm. Sprinkle the chicken with a mixture of flour, salt, pepper, and dried oregano.

Heat a skillet over medium heat, then add a generous amount of olive oil to the pan. Carefully place the chicken breasts in the skillet and cook until they are fully cooked, flipping them occasionally to ensure even cooking. Remove the chicken from the skillet and set it aside on a warm plate.

In the same skillet, melt a small amount of butter over medium heat. Add sliced mushrooms, sun-dried tomatoes, and Marsala wine to the pan, stirring occasionally as they cook for approximately 10 minutes. Introduce a handful of fresh spinach leaves to the pan and stir gently, allowing them to cook for about 2 minutes.
