  • 2/3 cup grated Parmesan cheese
  • 1 1/3 cups bread crumbs
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cups milk
  • 12 ounces chicken tenderloins
  • 1 1/2 cups vegetable oil for frying

Combine the flour, Parmesan cheese, bread crumbs, poultry seasoning, onion powder, garlic powder, salt and pepper in a large plastic bag. Mix the ingredients thoroughly by shaking the bag.

Next, heat the oil in a large skillet over medium heat until it reaches the point where a drop of water evaporates instantly.

Dip one piece of chicken into the milk at a time, coating it evenly before placing it back in the bag with the coating mixture. Shake the bag vigorously to ensure the chicken is fully coated.

Continue this process with the remaining pieces of chicken, cooking them in batches if necessary.

Once all the chicken is cooked, check for doneness by looking for browned edges. Flip the pieces over and cook until they are also browned on the other side.

For any chicken that is done cooking sooner, transfer it to a paper towel-lined plate and place it in a warm oven to keep it warm until serving time.
