Begin by moistening each side of the kasseri cheese with water, ensuring it's evenly coated. Next, coat both sides of the cheese in a layer of flour, covering every surface completely.

Heat up a seasoned cast iron skillet over medium-high heat until it reaches a smoky state. Pour olive oil into the hot skillet, allowing it to melt and coat the surface.

Carefully place the floured cheese into the hot oil, making sure it's fully submerged. Cook for approximately 2 minutes, or until the cheese starts to release its melted goodness and develops a golden-brown crust.

Using a spatula, quickly flip the cheese over to cook the other side. Continue frying until the bottom of the cheese is a deep golden brown, approximately 30 seconds longer.
