- 2 shallots
- 6 cloves garlic
- 2 tablespoons fresh ginger
- 2 tablespoons Chinese five-spice powder
- 1 serrano pepper
- 2 tablespoons brown sugar
- 1/2 teaspoon ground anise seed
- 1/2 teaspoon salt
- 2 pounds bone-in chicken parts

Combine the soy sauce, oil, sherry, minced shallots, garlic cloves, grated ginger, Chinese five-spice powder, diced serrano pepper, brown sugar, anise seeds, and salt in a blender or food processor and blend until the mixture is well combined and smooth.

Transfer the chicken to a large container or bowl. Pour the blended marinade over the chicken, cover it with plastic wrap, and refrigerate for at least 1 hour to allow the flavors to penetrate.

Heat a grill or barbecue to high temperatures.

Brush the grill grate with oil to prevent sticking. Discard the marinade and reserve it for serving.
