Ingredients
- 2 sticks butter
- 3 pounds boneless beef roast
- 4 1/2 cups water, divided
- 1 onion, thinly sliced
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 4 potatoes, cubed
- 4 carrots, chopped
- 2 stalks celery, chopped
- 2 tablespoons all-purpose flour

Heat a large container over medium-high heat and melt the butter, stirring occasionally. Sear the beef in the hot butter until it's evenly browned on all sides, then remove it from the pot. Pour in 4 cups of water and bring the mixture to a rolling boil. Add the chopped onion, salt, and pepper to the pot and stir well. Gradually reduce the heat to a low simmer and let it cook for 1 hour.

Next, add the sliced potatoes, carrots, and celery to the pot. Continue to simmer for an additional 1 1/2 hours or until they're tender.

In a separate, small bowl, whisk together the remaining 1/2 cup of water and flour to create a smooth, thin paste. Stir this mixture into the soup and continue to simmer until it thickens, approximately 15 minutes.
