Fingerling Potatoes Grilled in Foil
Ingredients
  • aluminum foil
  • 1 1/2 tablespoons butter
  • 6 medium unpeeled potatoes, washed and cut into thick slices
  • 1 onion, sliced
  • 1 green bell pepper, cut into long strips
  • 2 teaspoons garlic powder
  • salt and ground black pepper to taste
Instructions
1
Prepare the outdoor grill for high heat and secure its cover in place. Arrange three 18-inch long sheets of aluminum foil on a flat surface, with the dull side facing upwards.
2
Spread 1/2 tablespoon of butter evenly across the middle section of the first piece of foil. Add a portion equivalent to 1/3 of the potato slices, onion, and bell pepper onto the foil. Sprinkle with 1/3 of the garlic powder; season with salt and pepper to taste. Fold up the edges of the foil over the vegetables, ensuring a tight seal by pressing the edges firmly together. Repeat this process with the last two pieces of foil and the remaining ingredients to create two more sealed packets.
3
Lower the grill heat to a medium level. Place the foil packets on the grill grates; cook until the potatoes are tender, requiring 20 to 30 minutes of continuous heat.
