Ingredients
- 2 cups all-purpose flour, or more as needed
- 1/2 cup white sugar
- 2 teaspoons baking powder
- 1/2 cup margarine, softened
- 2 eggs, slightly beaten
- 1 teaspoon vanilla extract
- 1/3 cup poppy seed filling, or as needed
Instructions
1
Preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).
2
Next, take two baking sheets and apply a thin layer of grease to them using your fingers or a paper towel. This will prevent the cookies from sticking and make removal easier.
3
Meanwhile, combine 2 main ingredients - flour and sugar - along with a pinch of baking powder in a large mixing bowl. Use a pastry blender or 2 sharp knives to break down the margarine into small pieces, creating a mixture that resembles coarse crumbs.
4
Add 2 eggs and a dash of vanilla extract to the bowl, mixing everything together until you achieve a smooth dough consistency. If your dough is excessively sticky, don't worry - simply add more flour to balance it out.
5
Take your dough and roll it out on a lightly floured surface until it reaches an even thickness of approximately 1/4 inch. To create uniform cookie shapes, use a glass to cut out circles from the dough.
6
For each circle, place about 1/2 teaspoon of your chosen filling in the center. Fold up 3 sides into a triangle shape, pinching them tightly together to seal the cookie completely.
7
Finally, place your cookies on the prepared baking sheets and pop them into the preheated oven for about 25 minutes, or until they're golden brown.
