Filipino Stir-Fried Noodles
Ingredients
  • 1 (8 ounce) package thin rice noodles
  • 1/2 pound skinless, boneless chicken legs, cut into bite-size pieces
  • 1/2 pound pork tenderloin, cut into bite-size pieces
  • 1/2 cup soy sauce
  • ground black pepper to taste
  • 1/2 medium head cabbage, shredded
  • 2 carrots, shredded
  • 2 green onions, chopped into 1 inch pieces
  • 1/2 pound shrimp, peeled and deveined
Instructions
1
Submerge rice noodles in a large bowl and immerse them in warm water. Once they become pliable, cut them into 4-inch segments using a sharp knife. Discard the water and reserve the noodles for later use.
2
In a large skillet heated over medium heat, sear chicken and pork until they lose their natural pink hue. Sprinkle with soy sauce and a pinch of black pepper to enhance the flavor. Remove the cooked meat from the skillet and set it aside on a plate.
3
In the same skillet, sauté chopped cabbage and carrots until they reach your desired level of tenderness. Introduce the cooked noodles, chopped green onions, and shrimp into the skillet. Stir-fry everything together for 4-5 minutes, then return the cooked chicken and pork to the skillet. Continue cooking for an additional 5 minutes, allowing all the flavors to meld together.
