  • 1/4 cup water
  • 20 spring roll wrappers
  • 5 plantains, peeled and quartered
  • 1/3 cup brown sugar
  • 1 1/2 cups vegetable oil

Prepare the ingredients by placing sugar and water in distinct containers. Set aside spring roll wrappers, arranging them in a neat stack. Peel plantains and cut them into two halves lengthwise.

Begin assembling the egg rolls by placing one wrapper on a clean, flat surface with one corner pointing towards you. Sprinkle a small amount of sugar onto a plantain piece, positioning it 1 inch away from the corner facing you. Fold the corner over the plantain, then roll it up halfway to create a compact shape. Next, fold in both side corners and continue rolling until you reach the midpoint of the wrapper.

To seal the egg roll, moisten the top corner with your fingers and complete the rolling process. Repeat this procedure for each remaining wrapper.

Next, prepare the oil for frying by heating it to 350 degrees F (175 degrees C) in a deep-fryer or large saucepan. Arrange the egg rolls in a single layer and fry them until they are golden brown on the bottom, taking approximately 2 to 3 minutes. Flip the egg rolls over and sprinkle them with brown sugar, then continue frying for an additional 2 to 3 minutes.
