  • 1 large onion, quartered
  • 2 cloves garlic, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper, or to taste
  • 1 large eggplant, cut into 2-inch chunks
  • 1/2 head bok choy, cut into 1-inch pieces
  • 1/2 pound fresh green beans, trimmed and snapped into 2-inch pieces
  • 1/4 cup peanut butter, or as needed to thicken sauce

Fill a large saucepan with water, then carefully add the oxtail, sliced onion, minced garlic, salt, and pepper.

Bring the mixture to a rolling boil, then gradually reduce the heat to medium-low and let it simmer for 2 hours, periodically removing any foam that rises to the surface.

As the oxtail becomes tender and the broth is reduced, it should be approximately 3 cups.

Next, stir in the sliced eggplant, chopped bok choy, and green beans.

Continue to simmer for about 20 minutes, or until the vegetables are tender and have reached your desired level of doneness.
