Filipino Chicken Afritada
Ingredients

  • 3 cloves garlic, crushed and chopped
  • 1 onion, chopped
  • 1 cup seeded and chopped tomatoes
  • 1 (3 pound) whole chicken, cut into pieces
  • 3 cups water
  • 1 cup tomato sauce
  • 3 potatoes, quartered
  • 1 green bell pepper, seeded and cut into matchsticks
  • 1 carrot, chopped
  • salt and ground black pepper to taste

Preheat the wok over medium heat by warming oil in it. Introduce minced garlic into the wok and cook, stirring constantly, until its aroma becomes apparent, approximately 3 minutes.

Next, add sliced onions to the wok and cook, stirring constantly, until they lose their crunchiness and become transparent, roughly 5 minutes.

Subsequently, add chopped tomatoes to the wok and cook, using a fork to mash them, until their skin and pulp separate, around 5 minutes.

Following this, introduce cooked chicken into the wok and cook, stirring constantly, until it develops a light brown color, roughly 5 minutes.

Then, pour water into the wok and cover it; bring the mixture to a boil. Introduce tomato sauce into the wok and let it simmer until all flavors blend together, approximately 15 minutes.

After that, add diced potatoes to the wok and let them simmer until they become tender, roughly 10 minutes.

Subsequently, add sliced bell pepper and carrot to the wok; let them soften until they are cooked through, roughly 5 minutes.
