  • 1 onion, chopped
  • 1 (14 ounce) can tomato sauce
  • 1/4 cup tomato paste
  • 2 red potatoes, diced
  • 1 red bell pepper, sliced
  • 1 large carrot, sliced diagonally
  • 1/2 pound miniature cocktail sausages
  • 1 (8 ounce) can pineapple chunks, undrained
  • 1 (6 ounce) can medium pitted ripe olives, drained
  • 3 large bay leaves
  • 1 tablespoon hot pepper sauce (such as Tabasco®)

Heat a generous amount of vegetable oil in a large cooking vessel over a moderate temperature. Season the beef with salt and black pepper before browning it in the hot oil along with minced garlic, taking approximately 10 minutes.

Combine diced potatoes, sliced red bell pepper, grated carrot, mini sausages, pineapple chunks with their juice, pitted olives, and bay leaves into the stew. Reheat the mixture to a boil and continue to simmer until the potatoes are tender, requiring an additional 20 minutes.
