  • 2 tablespoons soy sauce
  • 1 1/2 teaspoons white sugar
  • 3 tablespoons olive oil, divided
  • 1 medium sweet onion, chopped
  • 2 cloves garlic, crushed
  • 1 tablespoon oyster sauce
  • salt and ground black pepper to taste
  • 1 pound snow peas
  • 3/4 cup green peas
  • 1 medium carrot, sliced
  • 2 stalks celery, sliced
  • 1 medium red bell pepper, seeded and cut into chunks

Begin by placing the sliced steak in a substantial container; generously sprinkle cornstarch over the top and thoroughly mix to ensure even coverage.

To create a marinade, whisk together soy sauce and sugar in a small container until the sugar is completely dissolved; pour this mixture over the steak. Thoroughly combine and refrigerate for at least 2 hours or overnight to allow the flavors to meld.

In a large skillet, heat 1 tablespoon of oil over medium heat. Add the onion and garlic to the hot oil; cook, stirring occasionally, until they are tender, taking around 5 to 7 minutes. Stir in the oyster sauce and season with salt and pepper to taste.

Add a variety of vegetables - snow peas, green peas, carrot, celery, and bell pepper - to the skillet. Cook, stirring frequently, until they are crisp-tender, taking around 7 to 10 minutes. Remove the vegetables from the skillet and set them aside.

Remove the steak from its marinade, shaking off any excess moisture; discard the used marinade.

In the same skillet, heat the remaining 2 tablespoons of oil over medium heat. Fry the steak in the hot skillet to your desired level of doneness, taking around 3 to 5 minutes per side for medium. Add the vegetables back to the skillet; mix well and cook until just heated through. Serve hot.
