Ingredients
- 4 skinless, boneless chicken breasts
- 2 sprigs fresh oregano
- 1 sprig fresh rosemary
- 2 ounces feta cheese in brine, with 2 ounces of brine reserved
- 1 cup water
- 1 clove garlic
- 2 tablespoons olive oil
- freshly cracked black pepper to taste
- 4 slices lemon
Instructions
1
Cut the chicken into uniform 1-inch thick pieces and place them in a large, gallon-sized container with a secure lid.
2
Mince the oregano and rosemary sprigs using the blunt side of a knife or a meat pounder, leaving them intact but slightly crushed. Place these herbs on top of the chicken.
3
Combine feta cheese, the reserved liquid from the brine, water, and garlic in a food processor or blender until you achieve a smooth consistency. Pour this mixture over the chicken, seal the container, and refrigerate for 8 hours or overnight.
4
Heat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
5
Take the chicken out of the marinade and gently pat it dry with paper towels. Drizzle the chicken with olive oil, place it in a large baking dish, and sprinkle with black pepper. Place a slice of lemon on each breast.
6
Bake the chicken in the preheated oven until it reaches an internal temperature of at least 165 degrees Fahrenheit (74 degrees Celsius) and the juices run clear, taking around 22 to 25 minutes.
