Ingredients
- 4 large eggs, beaten
- 1/2 teaspoon black pepper
- 3 tablespoons crumbled feta cheese
- 1 teaspoon milk
- 1 tablespoon vegetable oil

Combine eggs and a pinch of pepper in a small bowl, whisking until well combined. In another small bowl, mix together crumbled cheese and milk until smooth.

Heat a generous amount of oil in a large non-stick skillet over high heat. Pour the egg mixture into the pan and gently tilt it until the bottom is evenly coated. Once the edges start to set, carefully place a line of the cheese and milk mixture in the center of the eggs. Using a spatula, fold the eggs over the top and bottom of the cheese mixture, then fold in the sides.
