Ingredients
- 1 (5.9 ounce) package individual jelly-filled roll cakes
- 1/2 cup sherry
- 2 pints fresh raspberries
- 1 tablespoon white sugar, or to taste
- 1 egg
- 2 egg yolks
- 1/2 cup white sugar
- 1/3 cup all-purpose flour
- 2 cups milk
- 1/2 cup half-and-half cream
- 1/2 teaspoon vanilla extract
- 2 tablespoons sherry
- 1 tablespoon butter
- 1/4 cup whipped cream
- 1/4 cup fresh raspberries
- 2 tablespoons chocolate curls

Cut the jelly rolls into 1-inch cubes; cover a glass serving dish with layers of these jelly roll pieces.

Drizzle 1/2 cup of sherry over the jelly roll cubes; sprinkle raspberries with sugar to taste and place them on top of the jelly rolls.

Combine egg, egg yolks, and 1/2 cup of sugar in a bowl; whisk until the mixture is smooth.

Add flour to this egg mixture and blend until it's fully incorporated, without any lumps.

Combine milk and half-and-half in a saucepan; heat over medium heat until the mixture starts to steam, but doesn't boil.

Gradually whisk in 1/4 cup of the hot milk mixture into the egg mixture until it's smooth; repeat this process, whisking in 1/4 cup of the hot milk mixture at a time, until you've incorporated about 3/4 cup.

Pour the egg-milk mixture back into the saucepan with the remaining hot milk; reduce heat to low. Whisk constantly as you heat the mixture until it thickens and reaches a smooth, just-simmering consistency (do not boil). This should take 3-4 minutes.

Add vanilla extract, 2 tablespoons of sherry, and butter to the sauce; allow it to cool for about 10 minutes while whisking occasionally to avoid lumps.

Pour the cooled sauce over the raspberries in the serving dish; cover it with plastic wrap and refrigerate until chilled and set, at least 2 hours.

Decorate the trifle with dollops of whipped cream, additional raspberries, and chocolate curls.
