- 3 cups frozen hash brown potatoes, thawed
- 1 (16 ounce) can refrigerated buttermilk biscuit dough (such as Pillsbury Grands!®)
- 1 1/2 cups shredded Mexican cheese blend
- 5 eggs
- 1/4 cup milk, or as needed

Preheat your oven to the desired temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Next, take a 9x13-inch baking dish and apply a thin layer of cooking spray to prevent sticking.

In a large skillet, heat the pan over medium-high heat and add the sausage. Cook and stir constantly until the sausage is fully broken down, evenly browned, and no longer has a pink color, approximately 5 minutes.

Drain any remaining grease from the skillet and stir in the hash brown potatoes. Continue to cook and stir until the potatoes are uniformly browned, about 5 additional minutes.

Arrange a layer of buttermilk biscuits at the bottom of your prepared baking dish, splitting them in half to completely cover the surface.

Spread the cooked sausage and hash brown mixture evenly over the top layer of biscuits, followed by a sprinkle of Mexican cheese.

In a separate bowl, whisk together the eggs and milk until well combined. Pour this mixture evenly over the cheese layer.
