Mediterranean Rice Pilaf
Ingredients
  • 1/2 cup pine nuts
  • 1/4 cup butter
  • 2 ounces spaghetti, broken into small pieces
  • 1/4 cup minced onion
  • 1/2 teaspoon minced garlic
  • 1 1/4 cups uncooked jasmine rice
  • 2 1/4 cups chicken broth
  • salt and ground black pepper to taste
  • 2 tablespoons chopped fresh parsley

Heat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Spread pine nuts on a baking sheet and bake in the preheated oven until they turn golden brown, approximately 12 minutes.

In a saucepan over medium-low heat, melt butter. Gradually increase the heat to medium and combine it with spaghetti; cook until the pasta is evenly coated in melted butter and has a light brown hue, taking around 3 to 5 minutes.

Add an onion and garlic to the saucepan and cook until they are tender, roughly 2 minutes. Then, incorporate rice into the mixture; continue cooking for an additional 5 minutes.

Pour broth into the saucepan and bring it to a boil. Cover the saucepan and cook until the rice is tender, with all liquid being absorbed, approximately 20 minutes.
