  • 2 large beets, diced
  • 1 cup water
  • 1/2 teaspoon salt
  • 4 large potatoes, diced

Preheat the cooking vessel by heating oil over a moderate flame. Introduce the onion and a small amount of seasoning; cook and stir until the onion becomes tender and loses its initial opacity, approximately 5 to 10 minutes. Introduce the garlic and ginger; cook and stir until aromatic, roughly 1 minute. Incorporate beets and blend the ingredients together. Introduce 1 cup of water and a small amount of seasoning; initiate boiling.

Cover the cooking vessel and decrease the heat to a lower medium level. Simmer, occasionally stirring, until beets can be easily pierced with a utensil, 20 to 25 minutes. Introduce potatoes and cook until they become soft but retain some firmness, roughly 15 minutes.
