  • 1/2 cup chopped green onions
  • 1 small carrot, peeled and very finely chopped
  • 4 eggs
  • 2 pinches ground white pepper, or to taste
  • 1 tablespoon vegetable oil, or as needed

Combine the sliced mushrooms, chopped green onion, and grated carrot in a spacious bowl. Introduce eggs to the mushroom mixture; blend until everything is harmoniously incorporated. Add a pinch of white pepper and mix thoroughly.

Heat vegetable oil in a skillet over medium heat. Using approximately 2 tablespoons of the egg mixture per patty, carefully pour each portion into the hot oil. Gently press the patties with the back of a spatula to ensure they adhere evenly. Cook until the bottom of each patty feels firm enough to flip, taking around 50 seconds. Flip and cook the other side until it's lightly browned, requiring about 10 to 15 seconds. Continue with the remaining egg mixture.
