English Raspberry Pudding

  • 1 1/2 cups white sugar
  • 1 tablespoon water
  • 3 cups fresh raspberries
  • 6 slices white bread
  • 1 cup whipped cream

Heat a saucepan over medium heat and blend together the sugar, water, and raspberries. Stir gently to avoid bruising the berries as they cook until the mixture reaches a hot temperature and the sugar is fully incorporated.

Set the saucepan aside to allow it to cool down slightly.

Prepare a 1 quart serving container by lining it with 5 slices of bread.

Pour the warm raspberry mixture over the bread, finishing off by placing the final slice on top. Cover the container loosely with plastic wrap to prevent drying out.

Place a weight, such as canned goods, on top of the container to keep it submerged in the liquid. Refrigerate for an overnight period.

The following day, remove the plastic wrap and invert the container onto a serving plate. Serve chilled, accompanied by whipped cream on the side.
