Ingredients
- cooking spray
- 2 (7 ounce) salmon fillets, skin removed
- 1 (6 ounce) can lump crabmeat, drained and flaked
- 1 (4 ounce) can tiny shrimp, drained
- 1/2 cup chopped mushrooms
- 1/4 cup mayonnaise
- 1/4 cup shredded Parmesan cheese
- 2 tablespoons lemon juice
- 2 tablespoons chopped green onion
- 2 tablespoons dry bread crumbs
- 1/2 teaspoon seafood seasoning (such as Old Bay®), or more to taste
Instructions
1
Firstly, heat your oven to the desired temperature of 350 degrees F (175 degrees C).
2
Next, lightly grease a baking sheet with cooking spray to prevent the salmon from sticking.
3
Then, carefully cut a horizontal slit through the middle of each salmon fillet, approximately two-thirds of the way down from the top. Set these aside for now.
4
In a separate bowl, combine crab, shrimp, mushrooms, mayonnaise, Parmesan cheese, lemon juice, green onion, and bread crumbs together. Mix well to create a harmonious blend of flavors.
5
Now, shape approximately two-thirds of the stuffing mixture into two substantial mounds on the prepared baking sheet.
6
After that, take one salmon fillet and carefully spread it open, placing it over each mound. Fill the top of the slit with the remaining stuffing mixture.
7
Finally, sprinkle a pinch of seafood seasoning over each fillet to enhance their flavor.
8
Bake the salmon in the preheated oven for about 30 minutes, or until it flakes easily with a fork and the stuffing is hot and cooked through.
