Egyptian Spice Blend
Ingredients
  • 2/3 cup hazelnuts
  • 1/2 cup sesame seeds
  • 2 tablespoons coriander seeds
  • 2 tablespoons cumin seeds
  • 2 tablespoons freshly ground black pepper
  • 1 teaspoon flaked sea salt
Instructions
1
First, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius). This initial step sets the stage for all subsequent cooking processes.
2
Next, spread hazelnuts evenly onto a baking sheet and subject them to the preheated oven heat until they emit a fragrant aroma, approximately 5 minutes later. Remove the nuts from the oven and immediately pour them onto a tea towel to cool down.
3
Then, take the hot hazelnuts and vigorously rub them against the tea towel to detach their outer skins. This manual process helps in removing the unwanted outer layer, resulting in a smoother texture.
4
After that, set the hazelnuts aside to allow them to cool down completely. This pause in the cooking process is essential for achieving optimal results.
5
While the hazelnuts are cooling, toast sesame seeds in a dry skillet over medium heat. Stir them occasionally to prevent burning and continue cooking until they turn light golden brown.
6
Transfer the toasted sesame seeds to a medium-sized bowl and keep them aside for further use.
7
In the same skillet, toast coriander and cumin seeds over medium heat. Shake or stir them occasionally to prevent burning, until they start popping and releasing their flavors.
8
Transfer the toasted spices to a food processor and process them until they are finely ground. Combine this spice mixture with the toasted sesame seeds in a bowl.
9
Finally, add cooled hazelnuts to the food processor and process them until they are finely ground. Mix this ground hazelnut mixture with the sesame seed spice blend, adding pepper and salt as desired.
