- 1 eggplant - trimmed, peeled, and sliced 1/2-inch thick
- 1/2 cup olive oil
- 1 (6 ounce) can tomato paste
- 1 1/2 (6 ounce) cans water
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried parsley
- 1 clove garlic, crushed
- 1 teaspoon brown sugar
- sea salt and ground black pepper to taste
- 1 (8 ounce) package fresh mozzarella cheese, sliced
- 3/4 cup grated Parmesan cheese

Preheat your oven to the highest temperature setting, which is 425 degrees Fahrenheit. Next, take a non-stick cooking spray and coat the inside of an 8x14-inch baking dish to prevent food from sticking.

Mix together bread crumbs, a quarter cup of grated Parmesan cheese, and some crushed red pepper flakes in a shallow dish. Dip each eggplant slice into olive oil and then coat it evenly with the bread crumb mixture, pressing gently to secure. Arrange the eggplant slices on a baking sheet in a single layer and bake in the preheated oven until they are nicely browned and tender, taking around 15 minutes.

Remove the eggplant slices from the oven and lower the temperature to a more moderate level, which is 375 degrees Fahrenheit.

In a saucepan, whisk together tomato paste and water over medium heat, stirring constantly until the mixture comes to a gentle simmer. Add some chopped basil, oregano, parsley, minced garlic, brown sugar, salt, and black pepper to the saucepan and stir well.

Arrange the eggplant slices in the prepared baking dish, overlapping them slightly to cover the entire surface. Spoon the tomato sauce over the eggplant slices and top with a layer of melted mozzarella cheese and three-quarters cup of grated Parmesan cheese.

Bake the eggplant slices in the preheated oven until the cheese is melted and bubbly, taking around 15 minutes. If you prefer a golden-brown top, place the baking dish under the broiler for an additional 1 to 2 minutes. Let the dish stand for 5 minutes before serving.
