Ingredients
- 1 teaspoon butter
- 2 eggs
- 2 slices multigrain bread
- 1 ripe avocado, pitted, peeled
- 1 teaspoon lemon juice, or to taste
- 1 pinch cayenne pepper
- sea salt to taste
- ground black pepper to taste
Instructions
1
Heat the butter in a small cooking vessel over a relatively low heat setting, stirring occasionally.
2
Carefully place the eggs into the skillet in two parallel rows and cook until the bottom layer of the egg is opaque white and firm enough to be turned over, approximately 2-3 minutes.
3
Gently flip the eggs over while being mindful of the yolk, and continue to cook until the egg reaches your preferred level of doneness, adding an additional 2-5 minutes to the cooking time.
4
Prepare the bread slices by placing them in a toaster or under a broiler, subjecting them to heat for 3-5 minutes.
5
In a separate container, mash the avocado using a utensil until it reaches your desired consistency.
6
Combine the mashed avocado with lemon juice, cayenne pepper, and sea salt in a bowl, stirring until well incorporated.
7
Spread the avocado mixture onto the toasted bread slices, followed by a fried egg on top. Season with sea salt and pepper to taste
