Egg Sandwiches in a Donut Pan
Ingredients
  • 10 large eggs
  • salt and freshly ground black pepper to taste
  • 6 ounces cooked breakfast sausage
  • 3 tablespoons fresh chives, chopped
  • 6 mini bagels
  • 6 slices Cheddar cheese
  • Sriracha sauce or hot sauce (optional)
Instructions

Collect all the necessary ingredients and prepare your oven to 300 degrees Fahrenheit (or 150 degrees Celsius).

Spray a 6-cavity donut mold with cooking spray to prevent sticking.

Beat eggs in a large mixing container until they become smooth and there are no visible egg whites left. Add salt and pepper to the eggs and mix well.

Pour the egg mixture into the donut mold, distributing it evenly across all 6 cavities. Sprinkle cooked sausage over the eggs and add a sprinkle of chives to each cavity.

Place the donut mold in the preheated oven and bake until the egg rounds are cooked through and puffed up, taking around 10 to 12 minutes.

Meanwhile, slice the bagels in half and arrange them on a baking sheet lined with parchment paper.

Place cheese on one half of each bagel and bake until the cheese is melted and the bagels are golden brown, taking about 4 to 5 minutes.

Remove the egg rounds from the donut mold by running a knife along the edges.

Place one egg round on each bagel half and top with hot sauce if desired.
