Ingredients
- 1/2 (12 ounce) bag semisweet chocolate chips, or more to taste
- 1 1/2 cups heavy whipping cream, divided
- 1/4 cup hot, strong coffee
- 1/2 teaspoon vanilla extract

Combine chocolate chips in a large container.

Boil 1/2 cup of cream in a small cooking vessel over high heat until it starts to bubble and froth, keeping a close eye so it doesn't overflow, 3 to 5 minutes. Pour over the chocolate chips and cover for 1 minute.

Take off the lid and gently stir with a spoon until it's smooth. Mix in hot coffee and vanilla extract until all the chocolate has dissolved.

Beat the remaining 1 cup of cream in a cold glass or metal bowl with an electric mixer until it forms soft peaks. Fold the cream into the chocolate mixture gently until they're combined.

Pour into glasses and chill in the refrigerator until set, at least 3 hours.
