  • 4 cups chicken broth, divided
  • 2 tablespoons chopped fresh chives
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground ginger
  • 1 1/2 tablespoons cornstarch
  • 2 eggs
  • 1 egg yolk

Collect and prepare all necessary ingredients.

Save 3/4 cup of chicken broth for later use, then pour the remaining amount into a large saucepan. Combine chives, salt, and ginger in the saucepan and bring to a vigorous boil. In a separate container, mix the reserved 3/4 cup of broth with cornstarch until it forms a smooth paste. Set this mixture aside temporarily.

In another small bowl, whisk together eggs and egg yolk using a fork. Gradually pour the hot broth into the bowl with the egg mixture, adding it in small increments at a time. The eggs will immediately start cooking.

Slowly stir the cornstarch mixture into the boiling broth, blending it in gradually until the soup reaches your preferred level of thickness.
