Ingredients
- 10 cloves garlic, or more to taste
- 1/4 cup olive oil
- 3 tablespoons white vinegar
- 2 tablespoons dried oregano
- 1 tablespoon salt
- 1 1/2 teaspoons ground black pepper
- 5 pounds pork shoulder, trimmed of excess fat

Gather all the necessary ingredients and prepare them for use.

Combine minced garlic, olive oil, vinegar, dried oregano, salt, and black pepper in a mortar and pestle; grind into a smooth paste using the pestle.

Make incisions of varying depth in the pork, being careful not to cut too deeply. Fill these incisions with the garlic paste you created earlier; ensure that any remaining paste is evenly distributed over the surface of the pork.

Place the pork in a sealed plastic roasting bag and position it in a roasting pan with a built-in rack. Allow the pork to marinate in the refrigerator for 8 to 48 hours.

Remove the pork from the refrigerator, carefully lifting the lid and bringing it to room temperature over a period of 1 to 2 hours.

Preheat the oven to 300 degrees Fahrenheit (150 degrees Celsius).

Roast the pork, skin-side down, in the preheated oven until it develops a golden-brown color, approximately 2 hours.

Flip the pork over and continue roasting, skin-side up, until the juices run clear and an instant-read thermometer inserted into the center of the meat reads at least 145 degrees Fahrenheit (63 degrees Celsius), adding an additional 2 to 4 hours.
