- 2 cups milk
- 3 eggs
- 3/4 cup all-purpose flour
- 2 tablespoons all-purpose flour
- 1 tablespoon white sugar
- 1 dash salt
- 1 dash ground nutmeg

Combine the milk, eggs, three-quarters cup plus two tablespoons of flour, sugar, salt, and a pinch of nutmeg in a blender; blend until the mixture is well combined and has a smooth consistency.

Heat a preheated griddle over medium-high heat, making sure it is well-seasoned. Pour 1/4 to 1/2 cup of the batter onto the griddle and spread it out thinly. Cook for about 1 to 1 1/2 minutes, or until the top of the pancake looks almost dry.

Use a long, thin spatula to gently pry the pancake away from the griddle and loosen its edges. Flip the pancake over and continue cooking for about 1 minute more, or until it is just browned on the second side.

Once cooked to perfection, roll up the pancakes and serve a few at a time.
