- 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
- 1/2 medium onion, chopped
- 2 cloves garlic, crushed
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1 (32 ounce) jar spaghetti sauce
- 1 1/2 cups water
- 2 cups non-fat cottage cheese
- 1 (8 ounce) package part skim mozzarella cheese, shredded
- 1/2 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 12 uncooked lasagna noodles

First, preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius). Next, heat some oil in a large cooking vessel over a medium level of heat. Add a variety of fresh ingredients, including spinach, onion, garlic, oregano, and basil; cook until the onion has softened, taking about 3 to 5 minutes. Then, pour in a tomato-based sauce and water; let it simmer for about 20 minutes.

While the sauce is cooking, combine a mixture of cottage cheese, mozzarella, parsley, Parmesan, egg, salt, and pepper in a bowl until everything is well blended together.

Once the sauce has finished cooking, remove it from the heat; use a spoon to create a small amount of the sauce and place it at the bottom of a 9x13-inch baking dish. Add four uncooked noodles on top of the sauce, followed by 1/3 of the remaining sauce. Repeat this layering process two more times with four more noodles, 1/2 of the remaining sauce, and 1/2 of the cheese mixture. Cover everything with aluminum foil.

Finally, bake the dish in a preheated oven for 55 minutes. Remove the foil and continue baking for an additional 15 minutes. Let the dish rest for 10 minutes before serving.
