Easy South Indian Shrimp Curry
Ingredients
  • 1/4 cup vegetable oil
  • 1 large onion, chopped
  • 10 fresh curry leaves
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon ground coriander
  • 2/3 teaspoon salt
  • 1/2 teaspoon ground turmeric
  • 1 tomato, finely chopped
  • 1 teaspoon ground red chile pepper
  • 2 pounds medium shrimp - peeled and deveined
  • 1/4 cup water
  • 1 teaspoon garam masala
  • chopped fresh cilantro to taste

Heat the oil in a large cooking vessel over extremely high heat. Introduce the sliced onions into the pot and stir constantly until they acquire a deep golden color. Next, incorporate the curry leaves into the mixture, followed by the addition of the ginger garlic paste, coriander, and salt. Continue to stir for approximately 1 minute.

Add a pinch of salt and turmeric to the pot, then combine the diced tomatoes, chile powder, shrimp, and water. Gradually decrease the heat to a medium-high setting and cook for 7-8 minutes, or until the shrimp turn opaque. Take a moment to assess the seasoning and make any necessary adjustments to the salt and chile powder levels. Finally, sprinkle a dash of garam masala into the pot, stir well, and remove from heat.

Finish by garnishing with fresh cilantro leaves and serve alongside flatbread or steaming hot rice.
