Easy Slow Cooker Chicken Enchiladas
Ingredients
  • 2 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 cup all-purpose flour
  • 1/3 cup chili powder
  • 2 teaspoons ground cumin
  • 1 clove garlic
  • 1 teaspoon oregano
  • 1 teaspoon salt, or to taste
  • 1 pinch cayenne pepper, or more to taste
  • 4 skinless, boneless chicken breast halves

Combine the chicken broth, crushed tomatoes, flour, chili powder, minced garlic, ground cumin, dried oregano, salt, and cayenne pepper in a blender; blend until the mixture is well combined.

Put the chicken breasts into a slow cooker and pour the blended sauce over them.

Cover the slow cooker to trap the heat inside.

Cook on Low for 8 to 9 hours (or High for 4 to 6 hours).
